"I just made a wedding cake for my cousin's wedding and this book was clearly the best as far as giving practical advice, explaining how to fix problems (for example, what to do if you are making Italian meringue frosting and the egg whites are whipped before the sugar syrup is up to temperature or visa-versa so each recipe comes out perfectly!), and including such a wonderful array of gourmet recipes including how to make marzipan (which is so easy! using just corn syrup and almond paste which can be shaped like clay for edible decorations and then I hand tinted/painted mine using paste icing color) and chocolate plastic (simply white chocolate and corn syrup which can be molded or cut out with cookie cutters).

The book has lovely photographs with the recipes and directions immediately following each photo, or, if you're like me, you can pick and choose what ideas you like and augment to your heart's content! I had fun making a pound cake with raspberry mousse filling, Italian meringue buttercream frosting (so smooth and not as sweet as the usual confectioners sugar frostings and it tastes like whipped cream), and decorations out of marzipan and chocolate plastic in the shapes of grapes, acorns, leaves, and roses for the woodland theme wedding. The advantage of marzipan is that it can make very large decorations with little fear that it will collapse. I adore this book and have Dede Wilson's other book as well and hope she'll put out more!"

Of course there are all kinds of normal and unusual wedding cake stands out there, but which will be the perfect one for your cake? The glass cake stand is made from beautiful fine cut glass and has elegant fluted edges. Again, at such a low price, it cannot be beat. We love Ace of Cakes, the Food Network television show that shows a day in the life of Charm City Cakes Bakery in Baltimore, Maryland. Ace of Cakes Beach Wedding Cake

We just watched an episode where a couple were having a beach wedding and wanted a wedding cake that looked like a sandcastle. It was unbelievable how realistic it looked. The sand was carefully crafted out of graham cracker crumbs. They even took the time to shade the sand (graham crumbs) so in some places in actually looked wet, while other spots looked dry. Duff's people had pictures of the bride and groom while creating the cake, and made little models of them playing on the sandcastle together. How cute is that. And of course, the happy couple loved it when they showed Charm City delivering the cake.

Here are some great resources for getting a western wedding cake. For a start go to yellowpages.com, enter "wedding cakes" in the Find field and then enter your city or zip code. It will return the Wedding Cakes & Pastries category with a list of businesses in your area. Call them up, ask them if they have any photo examples of western wedding cakes they have done or if not, are they willing to design one for you. Ask them about estimated price based on the size of the cake
and how intricate the design is going to be. Don't waste time going down there if their price is too high or if they are not skilled enough to do special designs. Come right out and ask.
